Howdy, folks! Lainie Eilenberger here, your go-to real estate expert with Key & Slate Real Estate Group. While I'm passionate about helping you find your dream home in the heart of West Texas, today I'm stirring up something equally delightful—West Texas Ribeye Stew. It's a dish that captures the rugged charm and hearty flavors of our great Lone Star State.


Ingredients:


  • 2 lbs. of boneless ribeye steak, cut into bite-sized pieces

  • 3 large russet potatoes, peeled and diced

  • 3 carrots, peeled and sliced into rounds

  • 1 cup of fresh mushrooms, sliced

  • 1 large onion

  • 4 cloves of garlic, minced

  • 1 can (28 oz) of crushed tomatoes

  • 4 cups of beef broth

  • 2 tablespoons of vegetable oil

  • 2 teaspoons of chili powder

  • 1 teaspoon of cumin

  • Salt and pepper, to taste

  • Fresh parsley, for garnish

Instructions:


  1. In a large pot, heat the vegetable oil over medium-high heat. Add the ribeye pieces and sear until browned on all sides. Remove the ribeye from the pot and set it aside.

  2. In the same pot, add the chopped onions and garlic. Sauté for a few minutes until the onions are translucent and fragrant.

  3. Return the seared ribeye to the pot and sprinkle with chili powder and cumin. Stir well to coat the meat with the spices.

  4. Add the diced potatoes, sliced carrots, and sliced mushrooms to the pot. Give everything a good stir.

  5. Pour in the can of crushed tomatoes and beef broth. Season with salt and pepper to taste. Stir to combine all the ingredients.

  6. Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 30-40 minutes, or until the vegetables are tender and the ribeye is cooked to your desired level of doneness.

  7. Taste the stew and adjust the seasoning if needed. If you like it spicier, you can add more chili powder.

  8. Serve your West Texas Ribeye Stew hot, garnished with fresh parsley for a burst of color.

Directions:


  1. In a large mixing bowl, combine the cream cheese, cheddar cheese, Parmesan cheese, green onions, red bell pepper, black olives, and fresh parsley. Mix until all ingredients are well combined.

  2. Add the garlic powder, onion powder, salt, and pepper to the mixture. Stir until the seasonings are evenly distributed.

  3. Shape the mixture into a ball and wrap it in plastic wrap. Refrigerate for at least 2 hours or until firm.

  4. Once the cheese ball is firm, roll it in the chopped pecans, coating it evenly.

  5. Serve with your favorite crackers or sliced vegetables. Enjoy!

As we approach the holiday season, I wanted to share a delightful recipe that's been a family favorite for generations: Holiday Coffee Cake. This aromatic and mouthwatering treat is perfect for those cozy mornings or festive gatherings with loved ones. So, roll up your sleeves and let's get baking!


Ingredients:


For the Cake:


  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 cup sour cream

  • 1/2 cup unsalted butter (softened)

  • 2 large eggs

  • 1 tsp vanilla extract

For the Streusel Topping:


  • 1/2 cup brown sugar (packed)

  • 1/4 cup all-purpose flour

  • 1/4 cup unsalted butter (cold, cubed)

  • 1 tsp ground cinnamon

  • 1/2 cup chopped nuts (optional)

For the Glaze:


  • 1 cup powdered sugar

  • 2-3 tbsp milk

  • 1/2 tsp vanilla extract

Directions:


For the Cake:


  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.

  3. Add the softened butter, sour cream, eggs, and vanilla extract to the dry ingredients. Mix until well combined.

  4. Pour the batter into the prepared baking dish, spreading it evenly.

For the Streusel Topping:


  1. In a separate bowl, mix together the brown sugar, flour, and cinnamon.

  2. Add the cold, cubed butter and use a pastry cutter or fork to blend until the mixture resembles coarse crumbs. If you're using nuts, fold them into the streusel mixture.

  3. Sprinkle the streusel evenly over the cake batter in the baking dish.

  4. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
