Ingredients:


  • 3 lbs Yukon gold potatoes, peeled and diced

  • 4 grilled Hatch or Anaheim green chiles, peeled and chopped

  • ¾ cup yellow mustard

  • ½ cup mayonnaise

  • ¼ cup sour cream

  • 3 hard-boiled eggs, chopped

  • ½ cup diced red onion

  • ¼ cup sweet pickles, chopped

  • 2 tbsp pickle juice

  • 1 tsp smoked paprika

  • Salt & pepper to taste

  • Optional: chopped fresh dill or green onions for garnish


Instructions:


  1. Boil potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.

  2. Grill green chiles over open flame or grill until blistered, then peel and dice.

  3. In a large bowl, mix mustard, mayo, sour cream, pickle juice, paprika, salt, and pepper.

  4. Add potatoes, chopped eggs, onion, pickles, and grilled chiles to the bowl and gently fold.
