While I'm passionate about helping you find your dream home in the heart of West Texas, today I'm stirring up something equally delightful—West Texas Ribeye Stew. It's a dish that captures the rugged charm and hearty flavors of our great Lone Star State.
Ingredients:
2 lbs. of boneless ribeye steak, cut into bite-sized pieces
3 large russet potatoes, peeled and diced
3 carrots, peeled and sliced into rounds
1 cup of fresh mushrooms, sliced
1 large onion
4 cloves of garlic, minced
1 can (28 oz) of crushed tomatoes
4 cups of beef broth
2 tablespoons of vegetable oil
2 teaspoons of chili powder
1 teaspoon of cumin
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions:
In a large pot, heat the vegetable oil over medium-high heat. Add the ribeye pieces and sear until browned on all sides. Remove the ribeye from the pot and set it aside.
In the same pot, add the chopped onions and garlic. Sauté for a few minutes until the onions are translucent and fragrant.
Return the seared ribeye to the pot and sprinkle with chili powder and cumin. Stir well to coat the meat with the spices.
Add the diced potatoes, sliced carrots, and sliced mushrooms to the pot. Give everything a good stir.
Pour in the can of crushed tomatoes and beef broth. Season with salt and pepper to taste. Stir to combine all the ingredients.
Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 30-40 minutes, or until the vegetables are tender and the ribeye is cooked to your desired level of doneness.
Taste the stew and adjust the seasoning if needed. If you like it spicier, you can add more chili powder.
Serve your West Texas Ribeye Stew hot, garnished with fresh parsley for a burst of color.
