Sweet Potato Pecan Pie Bars Recipe
Ingredients:
For the Crust:
2 cups crushed graham crackers
½ cup melted butter
¼ cup brown sugar
For the Sweet Potato Layer:
2 large sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon ground ginger
¼ cup heavy cream
For the Pecan Topping:
1 ½ cups chopped pecans
¾ cup brown sugar
¼ cup melted butter
¼ cup maple syrup
1 teaspoon vanilla extract
½ teaspoon sea salt
Directions:
Preheat the Oven: Preheat your oven to 350°F and grease a 9x13-inch baking dish.
Make the Crust: Mix graham cracker crumbs, melted butter, and brown sugar, then press the mixture into the dish. Bake for 10 minutes and set aside.
Prepare the Sweet Potato Layer: Whisk together mashed sweet potatoes, sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and heavy cream until smooth. Spread over the crust.
Add the Pecan Topping: In a separate bowl, mix pecans, brown sugar, melted butter, maple syrup, vanilla, and sea salt. Sprinkle this over the sweet potato layer.
Bake: Bake for 35-40 minutes, until the pecan topping is golden and the sweet potato layer is set.
Cool and Serve: Cool completely before cutting into squares and serve with whipped cream for a festive finish!
