Sweet Potato Pecan Pie Bars Recipe


Ingredients:


  • For the Crust:

    • 2 cups crushed graham crackers

    • ½ cup melted butter

    • ¼ cup brown sugar


  • For the Sweet Potato Layer:

    • 2 large sweet potatoes, cooked and mashed

    • 1 cup sugar

    • 2 eggs

    • 1 teaspoon vanilla extract

    • ½ teaspoon cinnamon

    • ¼ teaspoon nutmeg

    • ¼ teaspoon ground ginger

    • ¼ cup heavy cream


  • For the Pecan Topping:

    • 1 ½ cups chopped pecans

    • ¾ cup brown sugar

    • ¼ cup melted butter

    • ¼ cup maple syrup

    • 1 teaspoon vanilla extract

    • ½ teaspoon sea salt


Directions:


  1. Preheat the Oven: Preheat your oven to 350°F and grease a 9x13-inch baking dish.

  2. Make the Crust: Mix graham cracker crumbs, melted butter, and brown sugar, then press the mixture into the dish. Bake for 10 minutes and set aside.

  3. Prepare the Sweet Potato Layer: Whisk together mashed sweet potatoes, sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and heavy cream until smooth. Spread over the crust.

  4. Add the Pecan Topping: In a separate bowl, mix pecans, brown sugar, melted butter, maple syrup, vanilla, and sea salt. Sprinkle this over the sweet potato layer.

  5. Bake: Bake for 35-40 minutes, until the pecan topping is golden and the sweet potato layer is set.

  6. Cool and Serve: Cool completely before cutting into squares and serve with whipped cream for a festive finish!
