Fall in West Texas brings cooler temperatures, vibrant sunsets, and a desire for hearty, flavorful meals that warm the soul. At Key & Slate Real Estate Group, we know that home is where the heart is, and nothing says home like sharing a delicious, homemade meal with family and friends. Today, we’re sharing a traditional Tex-Mex favorite with a spicy twist: Spicy Chorizo and Green Chile Tamales. This recipe blends the rich, savory taste of chorizo with the smoky heat of roasted green chiles, creating the perfect dish for your fall gatherings. While you enjoy these tamales, remember that Lainie Eilenberger and her team are here to help you find the perfect home throughout Lubbock and West Texas.

Spicy Chorizo and Green Chile Tamales Recipe

Ingredients:

For the Masa Dough:

  • 2 cups masa harina (corn flour for tamales)

  • 1 ½ teaspoons baking powder

  • 1 teaspoon salt

  • 2 cups chicken broth (or vegetable broth)

  • 1 cup lard or vegetable shortening, softened

For the Filling:

  • 1 lb ground chorizo sausage

  • 1 cup diced onion

  • 2 cups roasted green chiles, chopped (mild or hot, to taste)

  • 1 cup shredded Monterey Jack cheese

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

For Assembling:

  • 20-30 dried corn husks, soaked in warm water for at least 30 minutes

Directions:

  1. Prepare the Corn Husks: Place the dried corn husks in a large bowl of warm water. Use a plate to weigh them down so they stay submerged. Let them soak for at least 30 minutes until they’re pliable.

  2. Make the Masa Dough: In a large bowl, combine the masa harina, baking powder, and salt. In a separate bowl, beat the softened lard or shortening until fluffy. Gradually add the masa harina mixture and chicken broth to the lard, beating until the dough is smooth and spreadable. The dough should be soft but not sticky.

  3. Prepare the Filling: In a skillet over medium heat, cook the ground chorizo until browned, breaking it up with a spoon as it cooks. Add the diced onion and cook until softened. Stir in the roasted green chiles, cumin, smoked paprika, garlic powder, salt, and black pepper. Cook for another 2-3 minutes until well combined. Remove from heat and let cool slightly.

  4. Assemble the Tamales:

    • Lay a soaked corn husk flat on a clean surface.

    • Spread 2-3 tablespoons of masa dough in the center of the husk, spreading it into a thin layer about 4 inches square, leaving a border around the edges.

    • Add 1-2 tablespoons of the chorizo and green chile filling to the center of the masa, then sprinkle a bit of shredded cheese on top.

    • Fold the sides of the husk in toward the center, then fold up the bottom to close the tamale. The top should remain open. Repeat with the remaining husks and filling.

  5. Steam the Tamales: Place a steamer basket in a large pot and add enough water to just reach the bottom of the basket. Place the tamales upright in the steamer, open end up. Cover with a damp cloth or extra corn husks, and cover the pot with a tight-fitting lid. Steam over medium heat for 1 to 1.5 hours, adding water to the pot as needed, until the masa is firm and pulls away from the husk easily.

  6. Serve: Let the tamales cool for a few minutes before serving. Enjoy them with a side of spicy salsa, guacamole, or a drizzle of crema for an extra burst of flavor!

With the recent cuts in mortgage rates, the West Texas real estate market is primed for a buying spree. For homebuyers and investors, this is a golden opportunity to secure properties before prices potentially skyrocket. If you’ve been on the fence about buying, now is the time to act—and here’s why.

1. Mortgage Rate Cuts Are Fueling Demand

The Federal Reserve's recent rate cuts have made mortgages more affordable, bringing more buyers to the table. This increased demand is already being felt in the Lubbock market and surrounding areas, as more people are eager to lock in these lower rates. The competition is heating up, and this surge in demand could drive home prices higher in the coming months.

2. Limited Inventory Means Rising Prices

West Texas, including cities like Lubbock, Levelland, and Plainview, has been experiencing a limited inventory of homes. With more buyers entering the market due to lower rates, this scarcity is likely to push prices up. Buying now could save you thousands, as waiting could mean paying a premium later.

3. Invest Now, Reap the Rewards Later

For investors, lower mortgage rates mean better cash flow and higher returns on rental properties. As the population in Lubbock and surrounding areas grows, so does the demand for rental properties. Investing now not only secures a lower interest rate but also positions you to benefit from the increasing rental demand and property appreciation.

4. A Smart Move for First-Time Homebuyers

If you’re a first-time homebuyer, these rate cuts are an excellent opportunity to enter the market. Lower monthly payments mean you can afford more house for your money. By acting now, you can secure a home before prices climb, building equity faster.

5. Connect with West Texas’s Top Realtor
