This recipe blends the rich, savory taste of chorizo with the smoky heat of roasted green chiles, creating the perfect dish for your fall gatherings. Spicy Chorizo and Green Chile Tamales Recipe


Ingredients:


For the Masa Dough:


  • 2 cups masa harina (corn flour for tamales)

  • 1 ½ teaspoons baking powder

  • 1 teaspoon salt

  • 2 cups chicken broth (or vegetable broth)

  • 1 cup lard or vegetable shortening, softened


For the Filling:


  • 1 lb ground chorizo sausage

  • 1 cup diced onion

  • 2 cups roasted green chiles, chopped (mild or hot, to taste)

  • 1 cup shredded Monterey Jack cheese

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper


For Assembling:


  • 20-30 dried corn husks, soaked in warm water for at least 30 minutes


Directions:


  1. Prepare the Corn Husks: Place the dried corn husks in a large bowl of warm water. Use a plate to weigh them down so they stay submerged. Let them soak for at least 30 minutes until they’re pliable.

  2. Make the Masa Dough: In a large bowl, combine the masa harina, baking powder, and salt. In a separate bowl, beat the softened lard or shortening until fluffy. Gradually add the masa harina mixture and chicken broth to the lard, beating until the dough is smooth and spreadable. The dough should be soft but not sticky.

  3. Prepare the Filling: In a skillet over medium heat, cook the ground chorizo until browned, breaking it up with a spoon as it cooks. Add the diced onion and cook until softened. Stir in the roasted green chiles, cumin, smoked paprika, garlic powder, salt, and black pepper. Cook for another 2-3 minutes until well combined. Remove from heat and let cool slightly.

  4. Assemble the Tamales:

    • Lay a soaked corn husk flat on a clean surface.

    • Spread 2-3 tablespoons of masa dough in the center of the husk, spreading it into a thin layer about 4 inches square, leaving a border around the edges.

    • Add 1-2 tablespoons of the chorizo and green chile filling to the center of the masa, then sprinkle a bit of shredded cheese on top.

    • Fold the sides of the husk in toward the center, then fold up the bottom to close the tamale. The top should remain open. Repeat with the remaining husks and filling.

  5. Steam the Tamales: Place a steamer basket in a large pot and add enough water to just reach the bottom of the basket. Place the tamales upright in the steamer, open end up. Cover with a damp cloth or extra corn husks, and cover the pot with a tight-fitting lid. Steam over medium heat for 1 to 1.5 hours, adding water to the pot as needed, until the masa is firm and pulls away from the husk easily.

  6. Serve: Let the tamales cool for a few minutes before serving. Enjoy them with a side of spicy salsa, guacamole, or a drizzle of crema for an extra burst of flavor!
