Smoked Brisket Tacos with Fresh Pico de Gallo


Ingredients:


For the Smoked Brisket:

  • 3–4 lb brisket, trimmed

  • 2 tbsp kosher salt

  • 2 tbsp black pepper

  • 1 tbsp garlic powder

  • 1 tbsp smoked paprika

  • 1 tsp cayenne pepper (optional for heat)

  • 2 tbsp yellow mustard (as a binder)

  • Wood chips (oak or mesquite preferred)


For the Pico de Gallo:

  • 3 Roma tomatoes, diced

  • ½ small red onion, finely chopped

  • 1 jalapeño, seeded and diced

  • ¼ cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt to taste


For the Tacos:

  • 8 small corn or flour tortillas

  • ½ cup crumbled queso fresco

  • ½ cup sour cream or Mexican crema

  • 1 avocado, sliced

  • Fresh lime wedges for serving


Instructions:


Prepare the Brisket:


  1. Coat the brisket with mustard, ensuring an even layer.

  2. Combine salt, pepper, garlic powder, paprika, and cayenne. Rub the mixture generously over the brisket.

  3. Preheat smoker to 225°F, using oak or mesquite wood for authentic West Texas flavor.

  4. Smoke brisket for 8–10 hours or until it reaches an internal temperature of 195–205°F.

  5. Wrap in butcher paper and let it rest for at least 30 minutes before slicing against the grain.


Make the Pico de Gallo:


  1. Combine tomatoes, onion, jalapeño, and cilantro in a bowl.

  2. Squeeze fresh lime juice over the mixture and add salt to taste.

  3. Let sit for at least 15 minutes to allow the flavors to meld.


Assemble the Tacos:


  1. Warm tortillas on a skillet or grill until slightly charred.

  2. Fill each tortilla with tender slices of smoked brisket.

  3. Top with fresh pico de gallo, crumbled queso fresco, avocado, and a drizzle of crema.

  4. Serve with lime wedges and enjoy!
