So, saddle up and let's rustle up some good eatin' with a classic West Texas recipe: Country Style Schnitzel with Cream Gravy.
Ingredients:
For the Schnitzel:
4 boneless pork chops or cube steaks
1 cup all-purpose flour
2 eggs
1 cup breadcrumbs
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon garlic powder
Vegetable oil, for frying
For the Cream Gravy:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk
Salt and pepper, to taste
Directions:
Step 1: Prepare the Schnitzel
Place the pork chops or cube steaks between sheets of plastic wrap and gently pound them to an even thickness of about 1/4 inch using a meat mallet or the back of a heavy pan.
In three separate shallow dishes, place the flour in one, whisk the eggs in another, and combine the breadcrumbs with salt, pepper, paprika, and garlic powder in the third.
Dredge each piece of meat in the flour, then dip it in the beaten eggs, and finally coat it with the breadcrumb mixture, pressing the breadcrumbs onto the meat to adhere.
Heat about 1/4 inch of vegetable oil in a skillet over medium-high heat. Fry the schnitzel until golden brown and cooked through, about 3-4 minutes per side. Place the cooked schnitzel on a paper towel-lined plate to drain any excess oil.
Step 2: Make the Cream Gravy
In a separate saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for about 2 minutes until the mixture turns a light golden brown.
Slowly whisk in the milk and continue to cook, stirring constantly, until the gravy thickens and comes to a simmer. Season with salt and pepper to taste.
Step 3: Serve and Enjoy
Serve the schnitzel hot, drizzled with the creamy gravy. You can enjoy it with mashed potatoes, green beans, or your favorite side dishes. It's a hearty, comforting meal that's sure to satisfy.
