Tres Leche Cake with Fresh Strawberries and Whipped Icing Recipe

Ingredients for the Cake:

- 1 cup All-purpose Flour (King Arthur recommended)

- 1.5 tsp Baking Powder

- 1/4 tsp Salt

- 5 large Eggs, separated (organic, farm-fresh recommended)

- 1 cup Granulated Sugar, divided

- 1 tsp pure Madagascar Bourbon Vanilla Extract

- 1/3 cup Whole Milk

For the Tres Leches Mixture:

- 1 can (14 oz) Sweetened Condensed Milk (Borden's recommended)

- 1 can (12 oz) Evaporated Milk (Nestle Carnation recommended)

- 1/2 cup Heavy Whipping Cream (Land O Lakes recommended)

For the Whipped Icing:

- 2 cups Heavy Whipping Cream

- 3 tbsp Granulated Sugar

Garnish:

- Fresh Strawberries

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x13 inch baking dish.

2. Mix the dry ingredients. Combine flour, baking powder, and salt in a large bowl. Set aside.

3. Beat the egg yolks with 3/4 cup sugar until light in color and doubled in volume. Stir in the milk and vanilla.

4. Beat the egg whites to soft peaks, gradually adding the remaining 1/4 cup of sugar. Beat until glossy and firm but not dry.

5. Combine the mixtures. Gently fold in the flour mixture to the egg yolk mixture, then fold that into the egg whites.

6. Bake the cake. Pour the batter into the prepared pan and smooth the surface. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely in the pan.

7. Prepare the Tres Leches Mixture. Combine the sweetened condensed milk, evaporated milk, and heavy cream in a small saucepan over low heat. Stir until well mixed and heated through. Do not let it come to a boil.

8. Soak the cake. Once the cake has cooled, poke holes all over the surface with a fork. Slowly drizzle the tres leches mixture all over the cake, making sure to get it into the holes.

9. Chill the cake. Let the cake sit for about 30 minutes to soak up the milk mixture, then cover and refrigerate for at least 3 hours, or overnight.

10. Make the whipped icing. Beat the heavy cream with the sugar until stiff peaks form. Spread over the chilled cake.

11. Garnish with freshly sliced strawberries just before serving. Enjoy!

Start with quality ingredients, just like you would when choosing a home. I recommend using organic, farm-fresh eggs, premium all-purpose flour such as King Arthur, and pure Madagascar Bourbon vanilla extract for a superior flavor. Opt for Borden's Sweetened Condensed Milk, Land O Lakes Heavy Whipping Cream, and Nestle Carnation Evaporated Milk for that dreamy tres leches soak.

The final touch is a cloud of whipped icing, a delightful complement to the rich cake. Use fresh, quality strawberries for the garnish, just like the homes in our West Texas towns, where charming details make a world of difference.

In the same loving spirit we've crafted our tres leches cake, I bring my dedication and passion to a delightful medley of West Texas communities, from the vibrant spirit of Abernathy, the rich soil of Brownfield, the scenic Buffalo Springs, the charming Crosbyton, the bustling Denver City, the friendly Farwell, the Pumpkin Capital that is Floydada, Hale Center's agricultural heartland, the golden sunsets of Lamesa, the lively Levelland, the cotton-rich Littlefield, the bustling Lubbock hub, to the peaceful simplicity of Muleshoe.

My commitment doesn't stop there! The journey continues through New Deal's fresh beginnings, the warm community of New Home, the tranquil Olton, the open plains of Plains, the energetic Plainview, Post's historic charm, the close-knit Ralls community, the hidden gem that is Ransom Canyon, and the dynamic, oil-rich Seagraves.

Seminole, where Texas meets New Mexico, the windmill city of Silverton, the thriving Slaton, Snyder's traditional charm, the rustic beauty of Spur, the star-gazing haven of Sudan, Sundown's quiet allure, Tahoka's blooming wildflowers, the welcoming Tulia, and finally, Wolfforth, where your dream home can become a reality, all are under my loving, expert gaze.

Like the unique blend of flavors in our tres leches cake, each of these West Texas towns brings its own character to the table, and I'm here to help you find the one that's just right for you!
