Howdy there, y'all! It's Lainie Eilenberger, your trusted real estate expert with Key and Slate Real Estate Group, and today I'm taking a little break from helping you find your dream home in Lubbock and West Texas to share a bit of our local culinary charm. So, saddle up and let's rustle up some good eatin' with a classic West Texas recipe: Country Style Schnitzel with Cream Gravy.

Ingredients:

For the Schnitzel:

  • 4 boneless pork chops or cube steaks

  • 1 cup all-purpose flour

  • 2 eggs

  • 1 cup breadcrumbs

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • Vegetable oil, for frying

For the Cream Gravy:

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 cup whole milk

  • Salt and pepper, to taste

Directions:

Step 1: Prepare the Schnitzel

  1. Place the pork chops or cube steaks between sheets of plastic wrap and gently pound them to an even thickness of about 1/4 inch using a meat mallet or the back of a heavy pan.

  2. In three separate shallow dishes, place the flour in one, whisk the eggs in another, and combine the breadcrumbs with salt, pepper, paprika, and garlic powder in the third.

  3. Dredge each piece of meat in the flour, then dip it in the beaten eggs, and finally coat it with the breadcrumb mixture, pressing the breadcrumbs onto the meat to adhere.

  4. Heat about 1/4 inch of vegetable oil in a skillet over medium-high heat. Fry the schnitzel until golden brown and cooked through, about 3-4 minutes per side. Place the cooked schnitzel on a paper towel-lined plate to drain any excess oil.

Step 2: Make the Cream Gravy

  1. In a separate saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for about 2 minutes until the mixture turns a light golden brown.

  2. Slowly whisk in the milk and continue to cook, stirring constantly, until the gravy thickens and comes to a simmer. Season with salt and pepper to taste.

Step 3: Serve and Enjoy

Serve the schnitzel hot, drizzled with the creamy gravy. You can enjoy it with mashed potatoes, green beans, or your favorite side dishes. It's a hearty, comforting meal that's sure to satisfy.

Savoring the Best of West Texas: German Sausage with Sauerkraut and Mashed Potatoes with Pan Gravy

Before we delve into Lainie's exceptional real estate expertise, let's embark on a culinary journey through a beloved West Texas-inspired recipe: German Sausage with Sauerkraut.

Ingredients:

  • High-Quality German Sausages (look for renowned brands like Boar's Head or Johnsonville)

  • Sauerkraut (opt for authentic, fermented sauerkraut for the best flavor)

  • Potatoes (choose Russet or Yukon Gold for creamy mashed potatoes)

  • Butter (go for unsalted for better control of seasoning)

  • Flour

  • Milk

  • Salt and Pepper (freshly ground for a burst of flavor)

  • Fresh Herbs for Garnish (parsley or chives add a lovely touch)

Instructions:

  1. Searing the Sausages: Kickstart your culinary journey by searing the German sausages to golden perfection. This crucial step locks in their juicy essence while granting them a delightful crispiness. Reserve half of the savory pan drippings from the bratwurst for our lip-smacking gravy.

  2. Simmering the Sauerkraut: In the same pan, add sauerkraut and let it simmer until heated through. The sausages' savory remnants will infuse the sauerkraut with a delightful richness.

  3. Creamy Mashed Potatoes: While the sauerkraut is simmering, boil and mash the potatoes. Add a generous amount of butter and a pinch of salt for extra flavor. Creamy mashed potatoes are the perfect accompaniment to the savory sausages.

  4. Pan Gravy: To create a rich pan gravy, we will use the reserved pan drippings. In a separate pan, add the reserved drippings, then add flour, and cook until it turns a golden hue. Slowly whisk in milk until you achieve a smooth, luscious consistency. Season with salt and pepper to taste.

  5. Serve with Love: Plate the sausages on top of the sauerkraut, then to the side add the creamy mashed potatoes, and drizzle the tantalizing pan gravy. Garnish with fresh herbs for a burst of color and flavor.

This hearty West Texas-inspired dish is a testament to Lainie's love for the region's flavors and her commitment to sharing them with the world. It's a delightful meal that brings family and friends together, just like Lainie herself.
