History: The Chilton cocktail originated right here in Lubbock, Texas, at the Lubbock Country Club back in the 1960s. It's named after the club's long-time member named Dr. Chilton who asked a bartender one-night to fix'em up a drink made with lemon juice, vodka, club soda, ice, and with a salted rim. This simple yet refreshing concoction quickly became a local favorite, spreading its fame throughout West Texas and beyond.

Crafting the Perfect Chilton

Now, let's get down to business and mix up a Chilton of our own. Here's what you'll need:

Ingredients:

  • 2 oz Tito's Handmade Vodka

  • 1 oz freshly squeezed lemon juice (about 1 large lemon)

  • Club soda

  • Ice

  • Lemon wedge for garnish

  • Salt (optional)

Instructions:

  1. Start by rimming a highball glass with salt if you like a salted rim. Simply run a lemon wedge around the rim and dip it in a shallow dish of salt.

  2. Fill the glass with ice cubes, and squeeze in the juice from a freshly cut lemon. Feel free to adjust the lemon juice to your taste.

  3. Pour in 2 ounces of Tito's Handmade Vodka.

  4. Top off the glass with club soda, leaving a little room at the top for garnish.

  5. Give it a gentle stir to combine the flavors.

  6. Garnish with a lemon wedge or wheel.

  7. Take a sip and let the crisp, citrusy goodness transport you to the heart of West Texas.

Hello, friends! It's Lainie Eilenberger from Key and Slate Real Estate Group, your go-to real estate expert in Lubbock and West Texas. Today, I'm bringing you a delightful recipe for Country Style Blueberry Muffins, along with a side of real estate expertise. Let's dive right in!


Ingredients:

  • 1 1/2 cups all-purpose flour

  • 3/4 cup granulated sugar

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 1/3 cup vegetable oil

  • 1 egg

  • 1/3 cup milk

  • 1 cup fresh blueberries

  • 1/2 cup white sugar (for topping)

  • 1/3 cup all-purpose flour (for topping)

  • 1/4 cup butter, cubed (for topping)

  • 1 1/2 teaspoons ground cinnamon (for topping)

Directions:

  1. Preheat your oven to 400°F (200°C). Grease or line muffin cups with muffin liners.

  2. In a medium-sized mixing bowl, combine 1 1/2 cups flour, 3/4 cup sugar, salt, and baking powder.

  3. Place vegetable oil into a 1-cup measuring cup; add the egg and enough milk to fill the cup. Mix this with the flour mixture.

  4. Gently fold in the blueberries. Fill muffin cups right to the top, and sprinkle with the crumb topping mixture (combine 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon for the topping). Use a generous amount of topping to give your muffins that country-style, crunchy texture.

  5. Bake for 20 to 25 minutes in the preheated oven or until done. To check for doneness, insert a toothpick into the center of a muffin; if it comes out clean, your muffins are ready!

Howdy there, y'all! It's Lainie Eilenberger, your trusted real estate expert with Key and Slate Real Estate Group, and today I'm taking a little break from helping you find your dream home in Lubbock and West Texas to share a bit of our local culinary charm. So, saddle up and let's rustle up some good eatin' with a classic West Texas recipe: Country Style Schnitzel with Cream Gravy.


Ingredients:


For the Schnitzel:

  • 4 boneless pork chops or cube steaks

  • 1 cup all-purpose flour

  • 2 eggs

  • 1 cup breadcrumbs

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • Vegetable oil, for frying

For the Cream Gravy:

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 cup whole milk

  • Salt and pepper, to taste

Directions:


Step 1: Prepare the Schnitzel


  1. Place the pork chops or cube steaks between sheets of plastic wrap and gently pound them to an even thickness of about 1/4 inch using a meat mallet or the back of a heavy pan.

  2. In three separate shallow dishes, place the flour in one, whisk the eggs in another, and combine the breadcrumbs with salt, pepper, paprika, and garlic powder in the third.

  3. Dredge each piece of meat in the flour, then dip it in the beaten eggs, and finally coat it with the breadcrumb mixture, pressing the breadcrumbs onto the meat to adhere.

  4. Heat about 1/4 inch of vegetable oil in a skillet over medium-high heat. Fry the schnitzel until golden brown and cooked through, about 3-4 minutes per side. Place the cooked schnitzel on a paper towel-lined plate to drain any excess oil.

Step 2: Make the Cream Gravy


  1. In a separate saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for about 2 minutes until the mixture turns a light golden brown.

  2. Slowly whisk in the milk and continue to cook, stirring constantly, until the gravy thickens and comes to a simmer. Season with salt and pepper to taste.

Step 3: Serve and Enjoy


Serve the schnitzel hot, drizzled with the creamy gravy. You can enjoy it with mashed potatoes, green beans, or your favorite side dishes. It's a hearty, comforting meal that's sure to satisfy.
