Jalapeño Cheddar Biscuits are the perfect blend of flavors, just like the diverse communities I serve across Lubbock and West Texas. The spicy kick from the jalapeños, combined with the rich and savory cheddar cheese, makes these biscuits a real crowd-pleaser.


Ingredients You'll Need:

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 1/2 cup unsalted butter (cold, cubed)

  • 1 cup sharp cheddar cheese (shredded)

  • 2-3 jalapeños (seeds removed, finely chopped)

  • 3/4 cup buttermilk

Directions:

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

  4. Stir in the shredded cheddar cheese and chopped jalapeños.

  5. Pour in the buttermilk and mix until the dough comes together.

  6. Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Be careful not to overwork the dough.

  7. Roll out the dough to about 1-inch thickness. Use a biscuit cutter to cut out biscuits, and place them on the prepared baking sheet.

  8. Bake for 12-15 minutes or until the biscuits are golden brown and cooked through.

  9. Serve your Jalapeño Cheddar Biscuits warm, and enjoy the perfect balance of spice and cheese!

Howdy, everyone! Lainie Eilenberger here, your go-to real estate agent for Lubbock and West Texas. Today, we're stepping away from the world of real estate for a moment and diving into a piece of local history that's as refreshing as it is iconic: the Chilton cocktail.

The Chilton Cocktail: A West Texas Classic

In the wide world of cocktails, the Chilton stands as a proud testament to West Texas culture. It's a drink that's as unique and beloved as the people who call this region home. But what exactly is a Chilton, and where did it come from?

History: The Chilton cocktail originated right here in Lubbock, Texas, at the Lubbock Country Club back in the 1960s. It's named after the club's long-time member named Dr. Chilton who asked a bartender one-night to fix'em up a drink made with lemon juice, vodka, club soda, ice, and with a salted rim. This simple yet refreshing concoction quickly became a local favorite, spreading its fame throughout West Texas and beyond.

Crafting the Perfect Chilton

Now, let's get down to business and mix up a Chilton of our own. Here's what you'll need:

Ingredients:

  • 2 oz Tito's Handmade Vodka

  • 1 oz freshly squeezed lemon juice (about 1 large lemon)

  • Club soda

  • Ice

  • Lemon wedge for garnish

  • Salt (optional)

Instructions:

  1. Start by rimming a highball glass with salt if you like a salted rim. Simply run a lemon wedge around the rim and dip it in a shallow dish of salt.

  2. Fill the glass with ice cubes, and squeeze in the juice from a freshly cut lemon. Feel free to adjust the lemon juice to your taste.

  3. Pour in 2 ounces of Tito's Handmade Vodka.

  4. Top off the glass with club soda, leaving a little room at the top for garnish.

  5. Give it a gentle stir to combine the flavors.

  6. Garnish with a lemon wedge or wheel.

  7. Take a sip and let the crisp, citrusy goodness transport you to the heart of West Texas.

Hello, friends! It's Lainie Eilenberger from Key and Slate Real Estate Group, your go-to real estate expert in Lubbock and West Texas. Today, I'm bringing you a delightful recipe for Country Style Blueberry Muffins, along with a side of real estate expertise. Let's dive right in!


Ingredients:

  • 1 1/2 cups all-purpose flour

  • 3/4 cup granulated sugar

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 1/3 cup vegetable oil

  • 1 egg

  • 1/3 cup milk

  • 1 cup fresh blueberries

  • 1/2 cup white sugar (for topping)

  • 1/3 cup all-purpose flour (for topping)

  • 1/4 cup butter, cubed (for topping)

  • 1 1/2 teaspoons ground cinnamon (for topping)

Directions:

  1. Preheat your oven to 400°F (200°C). Grease or line muffin cups with muffin liners.

  2. In a medium-sized mixing bowl, combine 1 1/2 cups flour, 3/4 cup sugar, salt, and baking powder.

  3. Place vegetable oil into a 1-cup measuring cup; add the egg and enough milk to fill the cup. Mix this with the flour mixture.

  4. Gently fold in the blueberries. Fill muffin cups right to the top, and sprinkle with the crumb topping mixture (combine 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon for the topping). Use a generous amount of topping to give your muffins that country-style, crunchy texture.

  5. Bake for 20 to 25 minutes in the preheated oven or until done. To check for doneness, insert a toothpick into the center of a muffin; if it comes out clean, your muffins are ready!
