The Perfect Pumpkin Bars Recipe

Ingredients:

For the Pumpkin Bars:

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon ground cloves

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup granulated sugar

  • 1 cup packed light-brown sugar

  • 1 cup (2 sticks) unsalted butter, melted and cooled

  • 4 large eggs

  • 1 can (15 ounces) pumpkin puree

  • 1 teaspoon pure vanilla extract

For the Cream Cheese Icing:

  • 8 ounces cream cheese, softened

  • 1/4 cup (1/2 stick) unsalted butter, softened

  • 2 cups powdered sugar

  • 1 teaspoon pure vanilla extract

Instructions:

Preheat Your Oven:

  • Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.

Prepare the Pumpkin Bars:

  1. In a medium bowl, whisk together the flour, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt. Set this mixture aside.

  2. In a large mixing bowl, combine the granulated sugar, brown sugar, and the melted, cooled butter. Mix until well combined.

  3. Add the eggs one at a time, ensuring they're fully incorporated after each addition.

  4. Stir in the pumpkin puree and pure vanilla extract.

  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  6. Pour the batter into the prepared baking pan, spreading it evenly.

Baking Time:

  • Bake in the preheated oven for approximately 25-30 minutes. To check for doneness, insert a toothpick into the center—it should come out clean.

  • Once baked, remove the pan from the oven and let the pumpkin bars cool completely on a wire rack.

Cream Cheese Icing:

  • While the bars are cooling, prepare the cream cheese icing. In a mixing bowl, beat the softened cream cheese and butter until smooth.

  • Gradually add the powdered sugar and vanilla extract, continuing to beat until the icing is creamy and well blended.

Icing the Pumpkin Bars:

  • Once the pumpkin bars are completely cool, spread the luscious cream cheese icing evenly over the top.

  • Cut the bars into squares or rectangles, and you're ready to enjoy!
