As a proud member of the Key and Slate Real Estate Group, I'm not just about finding you the perfect home; I'm here to create an experience that's as flavorful and fulfilling as a home-cooked meal.

Before we dive into the delectable dish I'm about to share, let me remind you that whether you're seeking a cozy corner in Abernathy or a slice of serenity in Sundown, my expertise spans across all the vibrant communities of West Texas. With years of experience and a deep love for this region, I'm dedicated to helping you find your dream home in any of these charming locales.

But enough about homes for now – let's talk about food! Today, I'm excited to share a mouthwatering recipe that's sure to impress even the most discerning palates: Blackened Shrimp on Homemade Tortellini with Alfredo Sauce. Trust me, this dish is a true crowd-pleaser, perfect for entertaining guests or treating yourself to a gourmet meal at home.

Recipe: Blackened Shrimp on Homemade Tortellini with Alfredo Sauce

Ingredients:

For the Homemade Tortellini:

  • 2 cups all-purpose flour

  • 3 large eggs

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

For the Blackened Shrimp:

  • 1 pound large shrimp, peeled and deveined

  • 2 tablespoons Cajun seasoning

  • 2 tablespoons olive oil

For the Alfredo Sauce:

  • 1/2 cup unsalted butter

  • 2 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup freshly grated Parmesan cheese

  • Salt and pepper to taste

Directions:

  1. Start by making the homemade tortellini dough. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Use a fork to gradually incorporate the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 5 minutes, then cover with plastic wrap and let it rest for 30 minutes.

  2. While the dough is resting, prepare the blackened shrimp. In a small bowl, toss the shrimp with Cajun seasoning until evenly coated. Heat olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, until blackened and cooked through. Remove from heat and set aside.

  3. Roll out the rested dough on a floured surface until thin. Use a round cookie cutter or glass to cut out circles of dough. Place a small spoonful of filling (such as ricotta cheese or your favorite meat mixture) in the center of each circle. Fold the dough over the filling to form a half-moon shape, then press the edges together to seal. Fold the corners of the half-moon together to form a tortellini shape. Repeat with the remaining dough and filling.

  4. Bring a large pot of salted water to a boil. Add the homemade tortellini and cook for 2-3 minutes, until they float to the surface. Remove with a slotted spoon and set aside.

  5. To make the Alfredo sauce, melt the butter in a saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant. Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

  6. Serve the homemade tortellini topped with blackened shrimp and drizzled with Alfredo sauce. Garnish with freshly chopped parsley or grated Parmesan cheese, if desired. Enjoy your gourmet meal!

West Texas Asian Fusion Chili Garlic Shrimp Recipe

Ingredients:

  • 1 pound large shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • 3 garlic cloves, minced

  • 1 tablespoon fresh ginger, grated

  • 2 tablespoons chili sauce

  • 2 tablespoons soy sauce

  • 1 tablespoon honey

  • Juice of 1 lime

  • 1 teaspoon smoked paprika

  • 1/4 cup cilantro, chopped for garnish

  • Salt and pepper to taste

Directions:

  1. Preparation: Start by marinating the shrimp. In a mixing bowl, combine the olive oil, minced garlic, grated ginger, chili sauce, soy sauce, honey, lime juice, and smoked paprika. Whisk together until well combined. Season the shrimp with a pinch of salt and pepper, then toss them in the marinade. Let them sit for about 15-30 minutes to absorb the flavors.

  2. Cooking: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp, spreading them out in an even layer. Cook for 2-3 minutes on each side or until the shrimp turn pink and opaque. Be careful not to overcrowd the pan to ensure each shrimp gets beautifully caramelized.

  3. Garnishing: Once cooked, transfer the shrimp to a serving dish. Sprinkle chopped cilantro over the top for a fresh, aromatic finish.

  4. Serving: Serve your Chili Garlic Shrimp hot, accompanied by steamed rice or a side of your choice, to soak up the rich, flavorful sauce.

Air Fryer Chicken Nuggets with Homemade Green Chili Gravy Recipe

Transforming the classic chicken nuggets by using an air fryer not only cuts down on oil but also locks in that irresistible crunch we all love. Paired with a savory homemade green chili gravy, this recipe brings a delightful blend of comfort and sophistication to your dining table.

Ingredients:

For the Chicken Nuggets:

  • 1 lb chicken breast, cut into bite-sized pieces

  • 1 cup all-purpose flour

  • 2 eggs, beaten

  • 2 cups breadcrumbs

  • Salt and pepper, to taste

  • For the Green Chili Gravy:

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 cup chicken broth

  • 1 cup green chili, roasted and chopped

  • 1 teaspoon garlic powder

  • Salt and pepper, to taste

Instructions:

  1. Prepare the Chicken: Season the chicken pieces with salt and pepper. Dredge in flour, dip in the beaten eggs, then coat with breadcrumbs. This layering ensures each nugget is perfectly seasoned and ready for crisping.

  2. Preheat the Air Fryer: Set your air fryer to 400°F (200°C). A preheated air fryer guarantees that your chicken nuggets start cooking at the optimal temperature for that ideal crispy texture.

  3. Cook the Nuggets: Arrange the chicken nuggets in the air fryer basket in a single layer, ensuring they're not touching. This might require cooking in batches. Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through. The internal temperature should reach 165°F (74°C).

  4. Make the Green Chili Gravy: While the nuggets cook, melt butter in a saucepan over medium heat. Stir in flour to create a roux, then gradually whisk in chicken broth until smooth. Add the green chili, garlic powder, salt, and pepper, simmering until the gravy thickens.

  5. Serve and Enjoy: Drizzle the warm green chili gravy over the crispy chicken nuggets and serve immediately. It's a dish that promises to bring the warmth and charm of West Texas right to your table.
