Welcome to my kitchen, where I'm excited to share one of my favorite recipes with you – homemade carrot cake with luscious cream cheese icing. This classic dessert is perfect for any occasion, whether it's a family gathering, a special celebration, or simply a sweet treat to enjoy with a cup of coffee.


Ingredients:


For the Carrot Cake:


  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1 ½ tsp baking soda

  • 1 tsp salt

  • 2 tsp ground cinnamon

  • 1 ½ cups granulated sugar

  • 1 cup vegetable oil

  • 4 large eggs

  • 2 cups grated carrots

  • 1 cup crushed pineapple, drained

  • 1 cup chopped walnuts or pecans (optional)

For the Cream Cheese Icing:


  • 8 oz cream cheese, softened

  • ½ cup unsalted butter, softened

  • 4 cups powdered sugar

  • 1 tsp vanilla extract

Directions:


  1. Preheat the Oven: Preheat to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. Mix Dry Ingredients: Whisk flour, baking powder, baking soda, salt, and cinnamon in a large bowl.

  3. Combine Wet Ingredients: Mix sugar, oil, and eggs until smooth. Gradually add dry ingredients, stirring until combined.

  4. Fold in Carrots and Pineapple: Fold in carrots, pineapple, and nuts (optional) until evenly distributed.

  5. Bake the Cake: Divide batter between pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Cool completely.

  6. Prepare the Cream Cheese Icing: Beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla, beating until smooth.

  7. Assemble the Cake: Spread icing between layers and over top and sides of cake.

  8. Decorate and Serve: Garnish with nuts or shredded carrots. Slice and enjoy!

Recipe: Cheese Enchiladas with Homemade Green Chili Sauce


Ingredients:


  • 12 corn tortillas

  • 2 cups shredded cheese (cheddar or Monterey Jack)

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 2 cups chicken broth

  • 1 cup chopped green chilies

  • 1/4 cup all-purpose flour

  • 1/4 cup vegetable oil

  • Salt and pepper to taste

Directions:


  1. Preheat your oven to 350°F (175°C).

  2. In a saucepan, heat the vegetable oil over medium heat. Add the flour and whisk until smooth to create a roux.

  3. Add the chopped onion and garlic to the roux and cook until softened.

  4. Gradually add the chicken broth, whisking constantly to prevent lumps from forming.

  5. Stir in the chopped green chilies and season with salt and pepper. Simmer for 10 minutes until the sauce thickens.

  6. Heat the corn tortillas in a dry skillet until soft and pliable.

  7. Fill each tortilla with a handful of shredded cheese and roll tightly.

  8. Place the filled enchiladas seam-side down in a baking dish.

  9. Pour the green chili sauce over the enchiladas, making sure to cover them evenly.
