Ingredients:
2 lbs. of beef stew meat, cut into bite-sized pieces
2 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 can (14 oz) fire-roasted tomatoes
2 cups beef broth
1 cup frozen corn
1 can (15 oz) black beans, rinsed and drained
2 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
Salt and pepper to taste
1 tbsp lime juice
Fresh cilantro for garnish
Instructions:
Heat olive oil in a large pot over medium heat. Brown the beef stew meat in batches, then set aside.
In the same pot, sauté the onion, garlic, and bell peppers until soft and fragrant.
Add the beef back to the pot along with the fire-roasted tomatoes, beef broth, chili powder, cumin, smoked paprika, salt, and pepper.
Bring to a boil, then reduce heat to a simmer. Cover and cook for 1.5 to 2 hours, or until the beef is tender.
Stir in corn and black beans. Simmer for an additional 10 minutes.
Add lime juice and garnish with fresh cilantro before serving.
