Baked Rosemary Whole Chicken Recipe
Ingredients:
1 whole chicken (approximately 4-5 pounds)
1/4 cup olive oil
2 tablespoons fresh rosemary leaves, minced
4 cloves garlic, minced
1 lemon, zested and juiced
Salt and pepper to taste
Directions:
Preheat your oven to 375°F (190°C).
Rinse the whole chicken under cold water and pat it dry with paper towels.
In a small bowl, combine olive oil, minced rosemary, minced garlic, lemon zest, lemon juice, salt, and pepper.
Rub the mixture all over the chicken, both on the skin and inside the cavity.
Place the chicken in a roasting pan or a cast-iron skillet.
Tie the legs together with kitchen twine for even cooking.
Roast the chicken in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
Once cooked, remove the chicken from the oven and let it rest for about 15 minutes before carving.
