Ingredients:


For the Pumpkin Bars:

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon ground cloves

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup granulated sugar

  • 1 cup packed light-brown sugar

  • 1 cup (2 sticks) unsalted butter, melted and cooled

  • 4 large eggs

  • 1 can (15 ounces) pumpkin puree

  • 1 teaspoon pure vanilla extract

For the Cream Cheese Icing:

  • 8 ounces cream cheese, softened

  • 1/4 cup (1/2 stick) unsalted butter, softened

  • 2 cups powdered sugar

  • 1 teaspoon pure vanilla extract

Instructions:


Preheat Your Oven:

  • Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.

Prepare the Pumpkin Bars:

  1. In a medium bowl, whisk together the flour, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt. Set this mixture aside.

  2. In a large mixing bowl, combine the granulated sugar, brown sugar, and the melted, cooled butter. Mix until well combined.

  3. Add the eggs one at a time, ensuring they're fully incorporated after each addition.

  4. Stir in the pumpkin puree and pure vanilla extract.

  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Crafting the Perfect Patty Melts: A Comfort Food Classic

Now, let's transition from the world of real estate to the realm of the kitchen as we whip up Patty Melts—a true comfort food classic. This hearty and satisfying dish embodies the warmth and coziness of home, making it a perfect match for the spirit of Lubbock and West Texas living.

Patty Melts Recipe:

Ingredients:

  • 1 pound ground beef

  • 1 large onion thinly sliced

  • Salt and pepper, to taste

  • 8 slices sourdough bread

  • 4 slices cheddar cheese

  • 4 tablespoons butter

  • 4 tablespoons mayonnaise

  • 4 tablespoons ketchup

  • 1 chopped jalapeno (optional)

Directions:

Step 1: Caramelize the Onions Start by heating a skillet over medium heat. Add a tablespoon of butter and the thinly sliced onions and chopped jalapenos. Cook the onions, and jalapenos stirring occasionally, until the onions turn golden brown and caramelized. This process usually takes about 15-20 minutes. Once caramelized, set the onions and jalapenos aside.


Step 2: Prepare the Patty In a mixing bowl, combine the ground beef, salt, pepper, and half of the caramelized onions. Mix thoroughly to ensure the seasonings are evenly distributed. Divide the mixture into four equal portions and shape them into patties.


Step 3: Cook the Patty Heat a skillet or frying pan over medium-high heat. Add the patties and cook for approximately 4-5 minutes on each side, or until they reach your desired level of doneness. Once cooked, remove the patties from the skillet and set them aside.


Step 4: Toast the Bread Wipe the skillet clean and return it to the heat. Add 2 tablespoons of butter and allow it to melt. Place four slices of sourdough bread in the skillet. Top each slice with a slice of Cheddar cheese and one of the cooked beef patties.


Step 5: Assemble the Patty Melts Spread 1 tablespoon of mayonnaise on the remaining four slices of sourdough bread, ensuring even coverage. Place these slices mayo-side down on top of the patties in the skillet.


Step 6: Flip and Cook Butter the tops of the sandwiches with the remaining 2 tablespoons of butter. Carefully flip the sandwiches using a spatula and cook for an additional 3-4 minutes, or until the bread is toasted, and the cheese has melted.


Step 7: Serve and Enjoy! Remove the delectable Patty Melts from the skillet, slice them in half diagonally, and serve hot. For a classic touch, provide ketchup on the side for dipping. I'm Lainie Eilenberger with Key and Slate Real Estate Group, and today, I'm here to share a mouthwatering recipe for Mesquite-Grilled Whole Chicken that'll have your taste buds two-stepping with joy. But before we dive into this finger-lickin' dish, let me tell you a bit about the real estate services I provide in Lubbock and West Texas.


Mesquite-Grilled Whole Chicken Recipe


Ingredients:

  • 1 whole chicken (about 4-5 pounds)

  • 1/4 cup olive oil

  • 2 tablespoons paprika

  • 2 tablespoons brown sugar

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme

  • Mesquite wood chips for smoking


Directions:


1. Prep the Chicken:

  • Rinse the chicken inside and out and pat it dry with paper towels.

  • Rub olive oil all over the chicken.

2. Season the Chicken:

  • In a small bowl, mix together paprika, brown sugar, salt, black pepper, garlic powder, onion powder, and dried thyme.

  • Rub this seasoning mixture all over the chicken, including the inside cavity.

3. Fire up the Grill:

  • Prepare your grill for indirect cooking over medium-high heat (around 350°F).

4. Grill the Chicken:

  • Place the chicken on the grill, breast-side up, away from the direct heat source.
